We discovered the Falafel Republic during one of our visits to Ashland to watch plays at the Oregon Shakespeare Festival and fell in love with the place. It has now become a regular haunt of ours when we are in town.

Falafel has become a bit of a go-to meal since we went to a completely plant-based diet, but the quality of the food does vary widely. The nice thing about the Falafel Republic is that the falafel is the least thing in the dish that we like. What we really love is the pitas they made onsite, the hummus and the delicious side dishes.

The menu is pretty easy to follow. You choose a base option: pita, bowl or salad. We always opt for the bowl because it includes the sides and we pay a bit extra for pita bread, which comes with hummus. Once you have made this choice you just select which sides and drinks you want. Simple!

The food is prepared as you wait in line – so it is fairly quick depending on the length of the queue. The only delay might be cooking the falafel and the pita bread – neither of which is major.

The restaurant is utilitarian – nothing flash here. But there is plenty of seating. We try and sit outside, as we’re usually here in the summer months. There is not much of a view outside unless you like to look out across a parking lot.
